Koru Lounge Raw Cacao & Coconut Bar

Base

  • 200g Butter
  • 300g Ground Almonds
  • 100g Sugar
  • 5ml Vanilla Essence
  • 2g Salt

Filling

  • 20g Cocoa
  • 350g Coconut Fine
  • 75g Sugar
  • 15ml Vanilla Essence
  • 500ml Coconut cream

Topping

  • 250g Dark Chocolate
  • 25g Butter
  • 225ml Cream

Method (Base)

  1. Preheat the oven to 325°F (160°C). Line tray baking pan with baking paper.
  2. Melt butter and mix base ingredients together. Press into prepared pan.
  3. Bake 15 minutes allow to cool for 10 mins

 

Method (Filling)

  1. Next filling ingredients. Mix well coconut, sugar, coconut cream, and vanilla. Pour over base and spread evenly and flat and chill

 

Method (Topping)

  1. Melt topping ingredients all together till smooth & pour over coconut filling and tap tray to spread evenly, chill 2 hours
  2. Cut into 3cm x 3cm squares
